A 15-Year Idea Brought to Life

Agave Bandido began as an idea nearly 15 years in the making.

Founder Mathew Baum grew up in Southwest Florida, where Latin culture, vibrant flavors, and hospitality are part of everyday life. From a young age he knew two things about himself — he loved entrepreneurship and he loved creating experiences that made people happy.

While attending the University of Kentucky, where he played soccer, Mathew wrote a business plan for a conceptual restaurant he called Gringo’s — a place where people would gather for bold Mexican food, handcrafted cocktails, and an atmosphere full of energy.

That idea never left him. After beginning his career as a franchise restaurant operator and later opening a speakeasy concept, Mathew continued developing his passion for hospitality, high-energy dining, and memorable guest experiences.

Then the opportunity came.

When an incredible corner location in Pembroke Pines, Florida became available, the vision that started as a college business plan finally came to life as Agave Bandido.

Prior to opening, Mathew partnered with Matthew Faul, whose extensive restaurant and cocktail experience helped shape the concept into what it is today — a full-service Mexican restaurant known for bold flavors, premium no-filler cocktails, high energy, and genuine hospitality.
